Raspberry jam, custard and coconut is a heady combination and is utterly delicious (in my opinion). Up North this combo is traditionally set in a pastry case and called a Manchester Tart! I love this combo and decided it was time to go one better and bake it into a blondie. You have a blondie with first a layer of raspberry jam, then a layer of custard and topped with desiccated coconut, then baked to perfection!
